EGGPLANT QUICHE

Ingredients:

– Pie crust.
– Cheddar Cheese.
– 1 egg.
– 100 ml of cream.
– 2 eggplants
– 2 peppers frying.
– 1 small onion.
– Nutmeg.
– Ground pepper.
– Olive oil.
– Salt

Preparation:

Cut the puff pastry into rounded and bulging edges giving the appearance of a quiche.
With a fork make holes in the entire surface of the mass, including the edges, to prevent the dough from rising more than it should.
Put it into a preheated oven at 180 degrees for 10 minutes.

Cover a pan with olive oil and heat over medium heat. Once olive oil is hot enough, add the chopped onion and wait untill they begin to change in color.
Then add the chopped peppers, eggplants and salt to taste. Saute until tender.
Remove all the extra water or fried oil and pour into the mold.
Beat the egg and mix with the cream.
Add salt to taste and mix a little ground nutmeg and pepper.
Add mixture to the pan on the rehash so it blends.
Add the grated cheddar cheese by slightly covering the entire surface.
Bake for another ten minutes. You can serve it either hot or cold.
